White bean & cucumber salad
Looking for a new salad this summer? Try this white bean and cucumber salad.
Salad Dressing Ingredients
1 garlic clove, minced
Juice of 1 small lemon
2 tablespoons extra virgin olive oil
1 tablespoon of balsamic vinegar
1 teaspoon Dijon mustard
Salad Ingredients
2 x 400g cans of cannellini beans
2 cucumbers, thinly sliced
3 radishes, cut into matchsticks
Half a bunch of fresh dill, stems removed and finely chopped
2 spring onions, finely sliced
Method
Make the dressing: add the garlic, lemon juice, oil, mustard, salt, and pepper to a small bowl and whisk together.
Make the Salad: add the beans, cucumber, radishes, dill, and green onions to a large bowl. Add the dressing to the bowl and then mix well until evenly incorporated.
