Maple Bacon Pancakes

It's was my sons 13 birthday recently and this was his breakfast request. Let me tell you they did not disappoint!! 

Ingredients

  • 200g Dorsognas Maple Glazed Streaky Bacon

  • 50 g butter melted, plus extra for frying

  • 300 g milk

  • 2 eggs

  • 20 g sugar

  • 200 g plain flour

  • 1 tbsp baking powder

  • ¼ tsp salt

  • 1 tsp vanilla essence

Method

  • Cook bacon in an airfryer at 200c for 9 minute or in the oven at 200c on a baking tray for 10 minutes. 

  • While cooking, make your pancake batter

  • Place melted butter into a mixing bowl.
    Add milk, eggs, sugar, plain flour, baking powder, vanilla and salt and stir together.

  • To cook pancakes, place a frying pan over medium heat and melt 1 tsp butter. For each pancake, dip bacon into pancake batter and then cook 1-2 minutes or until bubbles start bursting on the pancake surface. Turn the pancake over and cook for a further 1 minute. Transfer onto a plate. Repeat with remaining batter. Serve with maple syrup, extra butter and strawberries. 

  • With the leftover batter you can add choc chips pr blueberries or keep them plain and make round pancakes
