Fruity baked oats

Perfect for a cold morning! Cook the night before and reheat in the morning in the microwave, oven or air fryer.

Ingredients

  • 2 cups oats

  • 2 cups milk

  • 1 tsp cinnamon

  • 2 eggs

  • 1 mashed banana (optional)

  • 1/4 cup maple syrup or honey

  • 1 cup fresh or frozen berries


Method

Preheat the oven to 180 °c.

Grease a medium sized (around 22cm) baking dish with butter.

In a medium bowl mix all the ingredients together.

Pour ingredients into the greased baking dish.

Top with frozen berries.

Bake at 180 °c for about 30 minutes or until fully cooked.

Serve warm or cold with a dollop of Greek or coconut yoghurt and a tablespoon of peanut butter.

**For added protein you can add 2 scoops of collagen or regular protein powder or add 1/2 cup chopped nuts to the oat mixture.
